Figured it out. Instructions below for anyone else interested:
- Open the mesh of the particular light you're trying to change in NifSkope - Expand the various NiNodes etc until you see NiLightColorController - Expand the subsequent NiPoint3Interpolator branch, and then click on NiPosData - In the bottom left window, expand the "Keys" branch, and then expand the subsequent two "Keys" branches - Under the "Value" heading you'll see three numbers marked as X, Y and Z. X, Y and Z seem to correlate to R, G and B, so alter them in accordance with the RGB color you want. For example, I just wanted a completely neutral white lighting color, so I changed X Y and Z to all be 1.000000 - Do the exact same for the second "Keys" branch, then save and try it out in game
Just to make sure (for a dummy dum dum like me who spend hours trying to change the color), here's the image of the setting inside NifSkope that needs to be changed.
