By default the purple brahmin (and the bright yellow one) isn't included in the random lists, so there won't be any purple brahmins. Except for Doc Hoff's Pack Brahmin (consider it a little joke).

I'm using Brahmin tweaked texture mod, mainly for the glowing lanterns. Looks cool at night. Anyway, I installed this mod with it and it didn't want to overwrite anything, so that's good. Do you know if these two mods are compatible? If not, I'll let you know.
If you mean this mod, they should get along just fine. It just replaces the texture for the default (vanilla) brahmin. Moo doesn't change the lantern in any way.

I have to ask though, any possibility of a version without the bright purple one? The rest of them seem "believable", except that one.

It can easily be changed with GECK.
