I found the fix for the crash, but it removes the witcher 3 leshen skin from the wood elemental.
Here are the steps I took:
1. Open xedit to edit Enderal's mods. If you don't have xedit, download it. 2. Load all mods or at least the plugin called "creature replacer" which is this mod. 3. Find "Creature replacer" in the list of plugins. 4. Expand "Creature replacer" tab 5. Expand "Non-Player Character (Actor)" 6. On the right you can see the name of the creature which is the same as in game. 7. Find "Wood Elemental" I had 2 of them 8. Remove "Wood Elemental" by right clicking it and clicking remove 9. It will give you a warning but you have to ignore it 10. I think there was one more wood elemental in the race tab so delete that as well. Don't remove the one that is named WoodElementalRace - Spriggan. That is the spriggan and not the wood elemental. 11. Once you deleted all wood elementals close xedit, after closing xedit it will prompt you to save the changes you've made, save the changes and your game should work without crashing. 12. If you don't save your settings nothing will change.
There is an oversight with the custom Zu-Sherath appearance, which is only included in the creature_replacer.esp but not the undead_creatures_replacer.esp which also modifies him, so if you load the latter after the former you will never get to see it in-game. It's a shame because it's one of the best in the mod.
Personally, I removed the Witcher trolls and elementals but am enjoying the more diverse "Dragon Priests" and spiders. The desert spiders look much more like real arachnids than the standard ones. That one hut on the Island of Kor is even more terrifying now.
The undead creatures one causes the game to get stuck in the main menu screen. Any insight as to what may be the cause of this problem would be appreciated.
EDIT: This is a poor man's fix, so it probably isn't the best course of action, but loading this mod after EGO (which I have installed) and all its patches turned MugMug visible.

Setting the .ini path in xEdit manually through launch parameters did not work for me (Vortex), thus I was not able to edit.
