I am very intrigued by this mod as I hate having to constantly compare my armor quality rather than just wearing something that looks cool. How do you manage the game's difficulty when you are essentially playing a character who is not wearing armor? Do you have another mod to mitigate the increased damage taken and having minimal poise?
First of all - it is already balanced just like in the unmodded game - lose of protection is balanced by lose of equip load, and in this mod the armor has 0 weight. You roll faster, need to put less stats into endurance, or can do tons of damage in one hit by dual-weilding heavy weapons.
Second, if you mod the game only after you've completed it the game will be much-much easier anyway. Even with no armor enemies will hardly take more time to kill than they did on the firstplaythrough. That's where the name of the mod comes from, btw. Dark souls players found out that after some time it doesn't matter how you play the game - you can always complete it, even with no armor, broken sword and no levels, for those who found that out armor has became to be all about fashion, not protection.
Just believe in yourself and try it out, you have nothing to lose ;)

I'm not going to do this.
You can try to play just a normal version with this mod :) i.e. not stronger bosses, but weaker armor.
