I was having a lot of trouble using this in my new Ubuntu Linux set up. First, it requires dotnet30, so you have to install that:
WINEARCH=win32 bash winetricks dotnet30
Then, you need to go to Options tab to update the paths to the actual exe files, because they will be obviously wrong. Your bin_ship directory is probably something like:
~/.steam/steam/steamapps/common/Dragon Age Ultimate Edition
That's in the 'Z' virtual drive under 'My Computer'.
Less obviously, the 'My Documents' paths in the 'Dragon Age: Origins' section are also wrong! Instead of using the default wine drive_c, you need to use Proton's drive_c. I found the Dragon Age directory at:

~/.steam/steam/steamapps/compatdata/47810/pfx/drive_c/users/steamuser/My Documents/BioWare/Dragon Age/
But the number under `compatdata` may be different for others.
Hope this is helpful to folks, wouldn't be surprised if there's an easier way to do it, please share if you find one. Thanks!
