Thanks for the comments that everyone is giving about issues that carried over from the original version.
I think that I may know what is wrong with dual wielding & some of the other issues.
Musical instruments may have to be hidden. I tried moving the flute to the hip but the results were worse. It stuck out to the side like it was still on the back / just moved to another position.
I will make some changes on my side and see if fixes the issues.
** UPDATE ** I was able to locate an original version of the EquipmentStyles.lsx file which helps with tracking down errors.
I know part of what causes the issue with the animations for dual wielding. Larian's animations for weapons on the upper back are different from weapons on the hips.
The animations for weapons on the upper back expect the weapons to be on the same side
The animations for weapons on the hip expect the weapons to be on the opposite side
The original version of the mod did not change the side where the weapon was located. Any (edit - Some) weapons that were moved from the right upper back were moved to the right hip instead of the left hip.
I will correct this error with version 1.1 along with trying to track down other issues.
Correcting the error may not fully resolve the animations for all of the dual wielding weapons though since I am unable to change the unsheathing/sheathing animations by editing EquipmentStyles.lsx. I have an idea of where to look, but this will have to be saved for version 2.0

Now working on making sure all the dual wield issues are avoided and putting other weapons on hip/back as I see fit (people seem to forget about a few other 1H weapons but I prefer sickles on the back). Unfortunately I don't have access to an original .lsx file for reference unlike the mod author here.
EDIT2: 20 minutes later and I'm on my way to finding a reference file so that I can make sure the .lsx file is as it should be. After that I may look into correcting things with regards to mismatching animations but I'm no modder.
It's not so hard, just find the Longsword section and replace all occurrences of: Dummy_Sheath_Upper_R with Dummy_Sheath_Hip_L Dummy_Sheath_Upper_L with Dummy_Sheath_Hip_R
Download this mod. Go to your game folder data, there should be a Public Folder there. Find the Equipment Types lsx file and use notepad to edit it @chickacola
As someone who want shortsword on back and someone who happened to use transmog mod that turn the dagger into shortsword, i need shortsword and dagger on back. Is there anyone may help me out? lol
That's a lot more work than just editing the two lines of text necessary. This kind of mod really doesn't need to be loaded as a .PAK file. Just makes things more complicated if you want to change something unless you wanna go ahead and make a .PAK file for every possible combination that you may want.
Can you possibly add a step by step for this installation? I'm using BGMM primarily so the .lsx format is new to me, but when I take the public folder and put it in Baldurs Gate 3/Data it's not making any changes to the weapon types. Is it because I'm trying to apply it to a pre-existing save?

Any chance you can add long swords to hip like from the original mod?

I took the Visible Shield mod, stripped out mod manager, replaced its .lsx file with this one, repacked it, so now I have a .pak to use with BG3MM :-)
I just need to pull the final file that Larian issued to get the mod updated then hopefully convert it to a pak and mod.io file.

To uninstall - delete the file Baldurs Gate 3/Data/Public/Shared/EquipmentTypes/EquipmentTypes.lsx
