The only way I can see thiswork in a lore friendly way is by making redguard npc's ride them, in fact it makes sense to see races ride their own mounts around skyrim. Actually I just got the idea of a mod that adds various mounted NPC's, for instance a redguard can ride this camel, khajiits might ride sabrecats, dunmer can ride guar, Orcs maybe ride maybe a dire wolf. Just some random ideas that popped in my head when I saw this mod.
I'm sure that could easily be done. I've encountered NPC's on the road mounted on horses before. But that type of camel wouldn't do well with the cold weather, and rocky terrain.
But think about it, look at the tamriel map when you get a chance. It would make perfect sense for traders or mercs from hammerfell and highrock to pass through skyrim to reach morrowind, and vice versa. They could start in the reach, pass through the tundra, and enter riften to reach morrowind, these regions are not blistering cold weather and should be sufficient enough for even a camel to survive a couple day long trip. Technically they can take boats, but some folks might not want to risk passing through the sea of ghost...
I'm not saying there's no logic in encountering a camel caravan or two, I'm just saying they wouldn't be Dromedary camels. Bactrian camels would make more sense. In the real world they were used on the Silk Road for centuries because they were better adapted to the rocky terrain, colder weather, and high altitude. They're also larger, can travel longer distances (two humps, more water), and carry more weight. Dromedary camels wouldn't handle the conditions in Skyrim nearly as well.
^RedDog6911 Camels don't store water in their humps(or anywhere else). The humps are actually just fat reserves that's used for energy when food is scarce. Though they can go longer than most mammals without water.
Back on topic though, I do agree that a Bactrian would make more sense in Skyrim's harsh climate.
While I can certainly respect the effort put into making a mod... I have to ask... Why would anyone want a camel in Skyrim? Especially a Dromedary camel... A Bactrian camel would have at least made slightly more sense realistically, since they can handle cold and high altitude better.

Oh, how I used to love the palaces of the Redguard compounds from Daggerfall.
