Autoharvest, autoloot mods may be useful, mods, that increase difficulty etc.
I usually play with high movement speed but very low HP so that any arrow or spell may instantly kill me. The problem with that is: melee enemies become useless sponges, that only waste my time. That's why I'm working on the mod that gives ranged attacks to all OBIS-bandits. (I'm testing it now and soon I'll release it)
Charge of Darkness may be useful for all kinds of play-styles. For example, if you play an archer, you can sprint, when your enemies come too close to you and knock them off their feet. It also works while riding a horse.
Sorry, I forgot that I've already implemented the magicka/stamina drain mechanics in this mod... LOL To change the values you need the program called Tes5Edit (because there are different names for different Skyrim versions, all of them are usually colled xEdit). This program is used for all kinds of stuff. It even lets you make your own mods with your own changes to the game. There are lots of tutorials. When you figure out how to use it, check out this mod's last image on the top of the page.
You should let the player play as a goat, and then it would be Goat Simulator meets Skyrim! BTW, If you didn't use any assets from the DLCs, you can remove them as masters from your plugin with TES5Edit, and then it will work with just the base game, too.
Great idea :) I think, there is a mod, that lets you play any npc, including goats. But I'm not sure goats can equip rings...
Tanks for the advice! I'm sure, I don't use all of the DLCs. I only use magic from the Dawnguard. But still, that magic is based on the vanilla effects like "Shield Charge perk". If I dig deep enough, I may be able to get rid of all dependencies...
Race doesn't matter. If you can sprint, you can use my mod. By the way, it the video my character is not a Khajiit. It's some kind of a dog race, I mean, species: https://www.nexusmods.com/skyrim/mods/13561/?
