I like this idea. Reminds of the Peter Chung animated series "REIGN: The CONQUEROR," in which Alexander tamed the giant man-eating horse.
Sticking them all in whiterun, however, seems way overcrowded, considering how big some of them are. The option of downloading the horse we want want would be a nice touch.
Perhaps you should consider dividing them across Skyrim, each one found at a different stable. Or perhaps, since they are so unique, they are each found in certain locations in the world.
I assume you didn't want to get into the scripting---> but It'd be awesome if each one was a reward for a very small quest, even if it's something as simple as, you have to defeat each one before you can ride it. Once defeated, the dead horse horses body would vanish, and the same horse would automatically be summoned into existence. However, it would now be yours to own and ride.

it TOTALLY works with Convenient horses.
For me, I chose Gallahad/the Palomino version, because it looks just like Frost. It lets me roleplay a scenario in which my character, a champion of Hircine, seeks his aid in the coming battle against Alduin. Eventually, the Daedric Prince heeds the call of his champion, bestows his blessing upon Frost, transforming him into Gallahad.
I just removed the other horses via console. However, I kept Dante around for one of my darker followers to use (it fits his personality).
Also, in my "head-canon," Gallahad can talk----HA!
I'm glad you like Gallahad And I like your head canon. It's always great to meet someone who doens't just "play" but creates own stories. I'm doing the same ^^.
I would love a mod that makes all the horses in the game larger. Not GIANT large, but VERY big horse large, like your smallest one, or a mod with three separate size choices. Could you make something like that?

You get an endorsement from me for the smallest, unsaddled horse. Very useful and well done. Thank you. The others, imho, are a bit over the top however.
that's why i made 4 very different horses so everybody finds the perfect one ^^ if the other ones are disturbing you there is a console command to delete them. i just don't remember it
