UFO could've helped with you that by choosing the dialogue option "You know." then "You could dress better.", which would allow you to remove her armor and give her what you want.
It doesnt work because Serana's robe wont show in her inventory and it will come back every time when removed as far as i know, correct me if Im wrong.
Weird, haven't played with followers in a long time, but I remember I could give Serana (while I was stuck with her in the questline) anything and she'd wear it, no buts, could even remove her entire clothes too, leaving her only in her undies.
I thought the Dawnguard patch for UFO would allow her be "customized" like the other followers. But I might be wrong on that.
I couldn't get UFO to make her give me her armor. I just would end up giving her better armor rated stuff like the blood witch armor which looks good on her. I am trying AFT now but haven't started DG yet on this playthrough. I would love to see a dummy script to replace the one that makes her put her hood on outside. I give her an invisible armor helmet and then console command remove her hood and the damn thing still comes back sometimes lol.

I've uninstalled all mods except this one and still nothing. I still can't get her to change outfits.

Edit.
You can also use the "You are naked" command and it will wipe her and put her in a maid outfit.
