Well I did not try this myself but you could try the following: create a sound-descriptor with your music, then make the organ an activator and for the "Activate" sound choose your sound-descriptor. The music will play when you activate the organ.
I wish the organ could have placed melodies at each row of keys instead of random ones and would be nice to add more melodies to the organs, Such as melodies for one organ and actual musical pieces for the other organ. I think its possible to fit 9 tracks on each organ by activating certain areas on the organ. Like placed melodies at each row of keys at certain points as of the following. Top left, Top Middle, Top right, Center left, Center Middle, Center right, Bottom left, Bottom Middle, Bottom right.
Good to see you doing some work for Skyrim Stroti. You did great work with your new meshes in Oblivion. Looking forward to see everything you have in store for Skyrim.
@n1x4 : I cannot handle blender myself. The original models were made by Stroti for Oblivion and I know that people export them as nifs with blender 2.49. I only converted them for Skyrim, there are workarounds for that.

This mod does not require any other files.
Nothing is changed in the game.
It is only the meshes and textures, not esp.
And, no music.
