You can click on the sabertooth and use console command to add her to your follower's faction. I have been using her for almost 1 year and half now and I do not have this issue unless something in the game alters her follower faction. Another reason may be that you still have a bounty in the hold.
Hey, can I ask you what hair mod are you using for yourself? Companion's hair is clearly from the mod you listed, but your own haircut isn't among the screened ones in the Hair Pack.
My own hair is from Hair pack of fallout3 from radioragae here it is: http://skyrim.nexusmods.com/mods/17993#content Although's a great hair pack mod and with no game problems I had some difficulties customizing some NPCs with this hair pack so make sure you back up your meshes and textures folders before you install just in case. (It may have just been some I did wrong personally though.)
