I'd say go for it! Who knows, you could place them in the citys of Cyrodil to make give the game more of that Daggerfall charm once you get the textures for your props.
Very interesting. I can't do UV maps worth crap, either, otherwise I'd over to help. If there's anything else you could use help with, though, I might be willing.
