No, i made this for DS2 first and the piercing shield isn't in that. I might do it, though. I thought someone would have already done one but i just searched and no one has bothered... I guess no one likes onions.
Not sure, i'm assuming that Siegmeyer has a low res texture on his armor. I never tried dumping them because i couldn't find him until he showed up at firelink.
If he has other textures i'll upload the NPC textures. Same with Sieglinde, but i also assume she would use the same textures as him.
Edit: Confirmed, Siegmeyer has really low-res textures so i'll update them soon. I'm only making 2k textures for those, though.
I was just coming on here to check this exact same very thing. I've got this gorgeous, shiny Catarina knight, with an HD Zwei mod, and an ugly little dirty shield.
It's going slowly but that's because i've been playing Dragon Age Inquisition. I barely get to play other games because of all the retexing i do so i needed a tiny break to actually play something instead of just modding for it.
Another thing to remember. I'm retexing three swords basically, not just one, so it will take a little bit of time.
I'll be uploading it towards the end of the month. Since the "Scholar" update is coming early February i want to give it as much of a chance to succeed as possible. Needless to say i am a bit disheartened at the lack of downloads of this version so it slowed down my plans a bit.
My next project will be the Greatsword(s) of Artorias for both DS1 and DS2. After that who knows.
BTW, if you ever want to know what i'm doing next just look at the comments of the last mod i release. I usually say what i'll be doing next.
I got burnt out. I did too many in a row. Besides, there's only two left and one i don't even want to do so really the Washing Pole is all i've got left to do. Darkdrift is almost pointless because all you can really see is the hilt.

HD = 2k textures
UHD = 4k textures
NPC = For Siegmeyer and Sieglinde only! - 1k and 2k textures (I will not be offering 4k's of these).
