Very little reason to go above the vanilla 512x512 texture size. You're never going to see a difference considering how far from everything the camera is in this game (even when it zooms in on a character's face during dialogue, it's still not enough for the higher resolution to make a difference unless you're running the game at 4k or above), so it's just a needless strain on the already unstable engine. Also, using the eye textures from W2 is not really a good idea considering the irises are smaller than W1's (so the characters look off with them).
There may be a small benefit from upscaling the vanilla eyes then downscaling them to vanilla resolution after (or 1024x1024, but that's as high as you should go), but that's about as far as I'd go concerning them.
I'm working on the textures of The Witcher 2, the eyes are more similar to the ones from The Witcher 1, so they will use them and connect with the Witcher 3 irises.
