Having one large store that sells a huge variety of goods can be more convenient for customers and gives the retailer more buying-power over the distribution chains.
Sell goods your pops need and get money for it - more than from the actual popneed income - you can get rid of over production (also if there arent any profitable trade routes). Plus Migration from that fancy Store. ;)

One simple thing, the cheaper the goods you sell are, the more income you make in theory, besides the fixed extra tax income (this is to counter the expenses for goods/wages/taxes)
Maybe im also gonna add other "pop needs catergory", for instance heating, or intoxicants
