This mod lets you selectively replace almost any/all villager names in the Stardew Valley using Pathoschild's Content Patcher. It shouldn't interfere with other mods unless they also modify or add dialogue or names.
Installation:
Get Pathoschild's Content Patcher and install it according to his instructions.
Download the Villager Name Replacer. (It has just about everyone.)
Unpack archive to your .../StardewValley/Mods folder.
Open .../StardewValley/Mods/Villager Name Replacer/content.json with a text editor. (Notepad++ recommended)
Change the "VillagerName" "Value" fields to your desired name. (more details in content.json)
Save changes and start the game.
Enjoy.
Deletion:
Removing it is as simple as taking it out of your mods folder. (delete or move)
Current Issues:
Please leave a message/bug report if you encounter anywhere a name isn't changing.
The .json files have some minor format issues that don't affect SMAPI, but I will clean up in the next update.
As far as I know this only will work well in English. While playing in other languages, dialogue lines that include names might show up entirely in English, since I didn't make it language specific. The fix is probably really simple, but I made this is about 30 min at 1 am and couldn't be bothered to figure it out then. Maybe in the future.
Legacy versions handled a single character at a time. The new version should work just as well if not better, but the following NPC's are supported in their own solo mod files under misc:
Abigail
Clint
Penny
Sam
Sebastian
Shane
