"Icre" is a traditional Romanian spread often found on the table for holidays such as Christmas or Easter. The process of making it is similar to making mayonnaise but with fish eggs instead of your casual eggs, these eggs be fancy. It involves adding oil to roe until it emulsifies, some lemon juice and carbonated water are also generally added. At the end most people add finely diced onion into it and mix it. The texture is similar to mayonnaise but the taste is unique and despite what it sounds like, it is absolutely delicious. It's usually eaten on top of fresh bread.
(I am aware this exists in other countries as well and that some other countries have something similar, don't come for me pls.)
