From the original description of ekroemer's UnusualApplications for Skyrim (standard edition):

This mod adds a small collection (3 classes so far) of convenience spells,

Harvest Flora:
As long as the concentration spell is active, pick ingredients (including insects & fish) from within an ever widening circle. The Player learns the spell after having finished the alchemy tutorial quest (talk to Arcadia, Ognar, or Zaria). Includes items grown in the HearthFires planters.

Find Any Ore:
Locate an non-depleted ore vein nearby and start a quest, marking the vein's location with a quest marker. The quest auto-finishes after a certain amount of time, removing the quest marker. The Player learns the spell after having finished the blacksmithing tutorial quest (talk to Adrianne Avenicci or Alvor).

Find Ore of [...]:
Additional spells for finding a given type of ore. These can be found in spell tomes scattered at appropriate places, or learned by mining ore after having received the Find Any Ore spell. For example, mine silver to learn the Find Silver Ore spell. These include all the vanilla ores (e.g. iron, ebony), HearthFires resources (i.e. clay and stone), and Dragonborn materials (i.e. heartstones and stalhrim).

For HearthFires, the chest you get after purchasing a plot of land will contain the spelltomes for Find Clay and Find Stone; they will not start or complete the blacksmithing tutorial, so if you want to get the rest of the Find ore spells after mining something, go do that tutorial. Oh, you don't like doing tutorials? Complain to ekroemer >:)

Vulture's Eye:
Locate nearby corpses and mark them with a particle cloud, also playing a skeleton sound.

Characters that have completed a tutorial quest before installation of this mod will receive the respective spell at startup.

If, for some obscure quest-progression reason you don't receive the spells, you can use the console to add their corresponding spells manually. The following commands should give you the appropriate spellID to use with addspell. I'd list the IDs directly, but the leading 2 digits change depending on your modlist and loadorder...

help "harvest flora"
help "find any ore"

player.addspell [spellID]

For a mod with a different approach at tackling the harvesting chore, check out IHarvest by IDontEvenKnow, which employs an army of whisps à la Scavenging Scamp for Oblivion.
