That would be cool for immersion, but a bit more complicated than what I did here. This was mostly just a cosmetic option I wanted for my game, and I thought I'd share it.
I haven't used that (looks cool, though, I'll check it out), but from the description it sounds like it should work. This mod unequips those items, and that one says it shows equipped weapons and shields.
Thanks! Haven't tested that extensively, so I don't know how much, but there is some amount of game time for NPC inventories to reset, or when changing cells. They should also switch back to their weapons when they enter combat (tested this on some guards, and with followers). This isn't a very permanent change.
