You can at least add points to magic, stamina, or health depending on the gem to make it much more worthwhile rather than just "Hey, i got too many gems, lets eat them."

You can do it as a way of getting rid of gems that take up inventory space while at the same time boosting the strength of the character. You can make it so that you can infuse a gem with magic, unlocking whatever potential it has to increase a stat by a certain amount depending on the quality of gem.
Say you have a regular ruby, and you use about... 50 magicka points to infuse it to unlock the potential, in this case its health, and you can increase your health points by 2 or 3.
All I can think of is that tumblr post with the kid who thought they were dragonkin being upset that their mom was mad at them for eating all her jewelry.
