There's an easier way to do it. You could give the gargoyle a damage resistance debuff by adding a perk that modifies the incoming damage, then add conditions to check for the weaptypemace and weaptypewarhammer keywords. You can then add that perk to the gargoyle race entry itself by creating a dummy magic effect, attaching the perk to it and making an ability with that effect, then modify the gargoyle race to give them that ability. Then you have every gargoyle in the game weak to maces and warhammers..
I was boring enough to edit each individual stat of nearly every weapon in the game for my mod. Do I have your blessing to get to work at this? Otherwise, you can also do what Ratboy suggested. Sounds like there's a clean option and an easy option.
Sure, you can. Also that's a clever way to do it. Perhaps I'll make another similar mod in the future that affects different types of creatures as you pointed out. Ash creatures, frost and storm atronachs could be vulnerable as well.

EDIT: I forgot the mod contains a script, therefore it can't be flagged.
