I haven't been modding enough to know what that would entail without research. If SKSE & PapyrusUtil are supported in the VR version and scripts do not need to be recompiled then it should be doable.
EDIT: After giving it more thought I don't think this is the way to go for VR. It might be possible to tweak the crosshair-to-camera offsets in Skyrim.ini/SkyrimPrefs.ini but it would 1) look weird in your game 2) still be inaccurate relative to playing without VR.
At some point I am sure Felisky will convert his mod to SSE and VR, and it will work fabulously. He is extremely talented and using hooks into Havok/engine events is far better than camera calculations. Sorry I can't help you; we just have to wait.
