Giants are under level, i just fix that. You want more challenge? well here it is. Remove giants level cap now they will level up with the player all the way to 100. Stats may vary depending on player level. Giant minimum level is set to level 10 with a calculated health of 349, 0 magicka, calculated stamina 286.They should give you a decent fight, also you may randomly encounter giant wondering around city outskirts, roads, mountains, hunting animals.
