How the new loot works:
By default, any NPC has 1 in 3 chance of dropping items. The loot they can drop is from their inventory and they can drop up to 3 items from their inventory. Quest items will drop right away as long as they're flagged correctly. Similar to how souls games work, when anything dies their gold (if they had any) is transferred directly to you. Enemies that have a chance to drop something will have a white wispy effect around them. Chests and other containers work normally.

Chances: As stated, everything has a 1 in 3 chance to drop something. This means from a chicken to Alduin the chances are 1 in 3. The chance can be changed in the MCM menu. Setting the MCM slider to 1 will set the drop chance to 100% for at least 1 item to drop. How many items they drop is dependent on how many items they have in their inventory and a random roll. Pressing the activate key will close the loot menu.

Gold Counter: This is pretty straight forward. Your gold will be shown in the bottom right hand of the screen. When you gain or lose gold it plays a little animation. This can be turned off in the MCM.

Inventory Key: The inventory key is a back up incase you need to get into an NPCs inventory. While holding down the key, hit activate on the NPC and their inventory will open normally.
Changing the Sounds: If you don't like the sounds they are clearly marked in the sounds folder. You could potentially find a pick up sound from another game and replace the Data\Sound\fx\DarkSoulsPickUp\DarkSoulsPickUpSoundEffect.wav to your own .wav file. You could also change the DarkSoulsPickUpGoldSoundEffect.wav to another .wav for when something dies and you get gold. Hint.
