If SE RMA could produce this, I would use it as well.
Why am I saying this? Every author releasing a mod, grants you the access of using their mod freely in your game, that's not theft. Anyone can use in their game assets a mod author has openly released, they don't put any limitations to that, afaik. So, considering the difference of modding years between Oldrim (2011) and SE (2016), you'd be a fool not to use mods from Oldrim or restrict you mod list to whatever is currently released in or ported to SE. In fact, I can't fathom any reasons not to use Oldrim mods on SE unless you want to be some kind of Skyrim SE purist.
Now, according to my mod manager, I have like 220 mods installed, 140 active plugins, I don't feel obligated every time I upload a screenshot to mention every single mod I've used in that picture (granted not every single mod is active or displayed in a screenshot, but I hope you get my point). Though most of the times I try to put at least the name of the armor/outfit I am showcasing in my screenshot's title, unless it's an edited mesh or textures in which case I try to avoid naming it even when I'm asked.
Anyway, this is getting too long, and with my crappy Engrish, possibly won't be very easy or enjoyable to read, so what I wanted to say is, maybe you shouldn't give a damn or claim asset theft every time someone uploads a screenshot with a bunch of mods that aren't available on SE yet. Quite honestly you blowing it out of proportion. Maybe it's a bit disrespectful towards mod authors, but it's not asset theft or "claiming their work as your own". Believe me I'm not taking anyone's side, I try to be as objective as I can, even though a great deal of mods I use come from Oldrim, and I don't know if that can really be possible. Sorry for the long wall of text.
Working with RaceMenu to define very basic body/facial features of your character is only the tip of the iceberg, you won't be able to be truly creative by limiting yourself to whatever morphs Race Menu Alternative has to offer. And people won't really respect you if you haven't used assets created by others, cuz no one would be impressed by looking at your very vanilla-flavored character. It's dumb thinking this way. My advice would be to search the nexus (even Oldrim mods) and use whatever eye, hair, body, skin texture you can find on your character, mix them up, if you see something you like on a screenshot ask around for info, tweak every little detail, then and only then you can be creative and make a character that truly shines. Don't limit yourself.
That's my 2 cents. Of course you can completely disregard what I said and stick with RMA, if it works for you, who am I to talk.
I guess that's a risk you have to take, my advice would be to install 1 mod at a time, then test in-game and if you see any conflicts, uninstall. I also usually read comments by other users on mod pages before I download, and if there are people complaining about mod issues, I skip.
And I've never had the chance to mess with Oldrim's racemenu, cuz I only own Skyrim SE (I think I missed the special offer for LE + SE by a few days or something, so I've purchased SE only), though I can relate with what you're saying, I can spend literally hours tweaking my characters details in Racemenu (usually hair and eyes are the most difficult to choose from, cuz I have like 5 hair mods, and I think 7 or so eye-textures mods).
But yeah, have fun with your character, don't be afraid to experiment with her. Good luck.
