Well, the dagger is simply an iron dagger with higher base damage and a 30 fire damage enchantment, so you can disenchant that, but the chance that you already have the fire enchantment is big, so you may already be able to make your own Chaos Dagger. As far as the hornet ring is concerned, you can disenchant it, and it is the same enchantment you get with the Dark Brotherhood gloves, that doubles crit damage with 1 handed weapons. The thing is however that it does not stack, so you cant have 2 items enchanted with 2x crit damage to get 4x crit damage, it will still only recognize one of the item. On top of that, I am not sure what items you can actually enchat with the double crit damage, it may be no item at all, I haven't tested it. I recommend you save your game just in case so you dont waste your hornet ring.
