Yeah, I suppose I could. I have a special Stahlrim armour I'm working on right now; once I finish that up I'll start on making this a full set. Shouldn't take me more than a few days.

I believe it's possible, but way beyond my personal capabilities. Moving the sheath to Karliah's position would require moving a node on the skeleton .nif, and then creating an animation to match it. That would also mean that all daggers would then use that position and animation.
SineOnE, I believe someone did that setup with a steel dagger. Unfortunately I can't remember for the life of me what the mod was called. Oh, also, the one that I did is in Bob's Armory. It has an accurate scabbard. Weapons don't show the scabbards unless equipped.
