Hide unwanted quest entries in the journal. Just mouse over it and press Delete, and it's gone. It's that easy.
The quest journal doesn't refresh until you close the menu and reopen it, so there will be an empty line in its place until then, but no worries. Your journal will be nice and tidy once you reopen it.
If you decide you want the deleted entries back, open up the MCM and find it in the list of deleted quest entries and click on it, but otherwise you never have to touch the MCM if you don't want to. You can also restore all by pressing shift+home while in the journal menu, or by pressing the Restore All button in the MCM. If you decide to uninstall the mod, maybe do a restore all first, or else the quests will stay hidden.
This doesn't remove or disable the quests themselves, so they are still in effect, and you can still do them. They just won't appear in the journal unless/until you advance to a new objective. You can also of course rebind the hotkeys to whatever you want.
