Convenient Horse Herding is still work-in-progress. I started working on it in late august as a feature of Convenient Horses but later decided to release it as a separate mod.
What is it about?
If you didn't already figure out by name it is a mod that will allow you to have your own herd of horses, up to 30. Every horse that you own and ride will be added to your herd.
What can I do with this herd?
Easy access to all of your horses. You can set the horse camp (outside of your estate or just about anywhere) or you can be the herd leader and have all horses follow you. You can also rename your horses!
How will all this work?
SKSE will be required to run this mod. Once in game you buy the full herding equipment from stable masters (see picture above). Wearing full equipment allows you to carry more loot and become a herd leader so all horses will follow you. Once you drop the equipment to the ground a flag will be set and you will still be able to use the basic equpment (backpack w/o the flag) for carry weight bonuses. Horses will then travel and gather near the flag and remain there. Map marker will also be added so you can access your horse camp from anywhere. By activating the flag you will be given option to rename or dismiss your horses or pick up the flag and have horses follow you until you decide to set the camp somewhere else or you can simply lave the equipment unequipped and horses will stay and wait or store it somewhere and all horses will return to their default home locations. Horse selection and renaming will be done via dilaogue system so you can do everything even if you are playing with xbox controller. As a bonus addition, future versions of Convenient Horses will support this mod and you will be able to use horse call and summon a horse of your choice from your herd.

You're actually almost there already, all that is lacking is the extra animal in your entourage and the harness. Most of the mechanics are in place i.e. the "follow" command. I really think pack animals are lacking in Skyrim, do you remember those three beautiful donkeys from Oblivion :p
