To get the 'Angler Extraordinaire' achievement you'd need to invest about 8 to 10h in the fishing mini game. This is my last save game right before the achievement popped, so load it up and go fishing once (just needs about 20 more fish) to get this.
Caution: This save game is rather far into the game and I'm not totally sure if just loading it up might trigger other achievements pops (for progress I've made in other parts) as well, so if you'd rather get all the others through regular means, I'd suggest doing this one last.
How to use: Extract the file into your save game folder. For Steam that's C:\Users\YOURUSERNAMEHERE\AppData\Local\Shenmue3\Saved\SaveGames
Next, you have to rename the file. All the numbers before the last 2 in the name correspond to the user's personal steam id, so you need to change these numbers to your own (SlotYOURSTEAMID64.sav). If you have other save files in the folder, they will show your steam id in their names. These
There's still one thing left to do, as I also found this comment on the steam forums:
I had a look into the file with HxD and found a userid entry near the end, but admittedly I wasn't too sure which values were relevant there, so I can't really give a detailed explaination on how to work it out. Hopefully all that is enough information for others to get it going!
If everything worked out as it should, you can then load it in game (it's the save with the Feb 6th 2023 date | 22/5/1987 in game time - see screenshot).
