Stewie's Tweaks is the biggest & best mod for New Vegas, but its default settings only act as a blank slate for you to start customizing it to your own taste, which can take multiple hours due to the huge amount of tweaks. This mod lets you skip some work and ships with fixes, QoL, and essential features already enabled.
If you would like to see what's included, open the Tweaks menu in-game and filter by the already enabled tweaks.
