I recall there being a mod which adds fortune tellers that can temporarily modify your luck stat in a similar manner to this. Is there a way to tie the two together - or with the random roll being presumably done at a the start of each day - having a modifier added to that based on say dialogue with fortune tellers would be too much work? As in if a fortune teller gave you a good fortune for the next day that would give you a higher chance of a good roll.
Thinking about that, if things were to be expanded. Having player actions influence luck could be interesting. I.e. giving money to the temples, or doing Daedric quests. Though the influence would need to be minor otherwise it would be too easy a way to receive the luck buff (unless there was a value tracking your deeds, i.e. a karma value, which may not be the intent of this mod).

That mod is a great reminder that if you use mod organizer 2 you should always pick the manual install to either install the good esp or set the data directory right (well already good here ^^) if you are new to it binge watch gopher videos on how to use modding tools, that dude saved me litteral tens of hours when I used to spend more time modding skyrim than playing it.
