I figured out the answer to my own question... I tried both of these console commands and they both worked: player->addsoulgem "vivec_god" "Misc_SoulGem_Azura" 1 -and- player->addsoulgem "vivec_god" Misc_SoulGem_Azura 1 ...One has parenthesis around Azura's soul gem, the other doesn't. They both seem to work.
After you kill vivec, can you console command a vivec soul gem, that way you can still play "devils rock for vivec's soul'? https://www.nexusmods.com/morrowind/mods/44031

Ok adding a post to this as well after running it with OpenMW v48, Rebirth 5.0+.
PLEASE NOTE... I installed this mod after completing main quest and in load order I put this after Rebirth also multi patched.
It works kinda...
The scripting seems to be a bit hit and miss with some events. The beginning where he teleports and summons clones of himself is infinite unless you tcl under the ground and fight him there.
The scripts for him teleporting you all over the place and the shoving spells work well enough for how old the mod is.
The fireball spam stage will never end. I had reflect at 100%+ and spell absorption and the vivec that should die just stops getting hit by reflect.
The only solution I could think of was to tcl to the giant vivec in the background and just kill him. This gave me the spear and unique dwemer artifact.
Also Muatra this is were I'm a little confused. Not sure if maybe it may not be script compatible with openmw but. The spear from what I read should have different enchantments on strike when equipping or in combat I believe but don't truly see any change. The only thing that does work is the change in attack sound on each strike. Could moslty be just an incompatible part of openmw but it does still work as a spear and does have a decent attack enchantment.
I haven't fully tested, but I think that if you confront Vivec as part of Vivec's Fate's questline, you won't have the new boss fight; but it'll be available if you attack him outside of of that context.
