Shadow of Nerevar

He's wearing the Royal Signet Ring, so don't bother with magic. It's best to rush him down and kill him before he can regenerate or use much of his own magic. Two of his spells greatly buff his own stats for 10 seconds, so if he starts to use those, try to attack him in between casts. Otherwise, be careful to dodge or reflect his offensive spells -- they're as strong as you'd probably make your own at a high level.

The Mountain That Rides

He's armored in the thickest and heaviest plate in Morrowind, and wields a massive sword with one hand to boot. His insane Strength stat means that you really don't want to be on the receiving end of that blade. However, it's a normal weapon, so Resist Normal Weapons can help a lot. Additionally, his agility is rather low, so staggering him or knocking him down is a good strategy to take advantage of.

  • Higher base rating / damage than any items in the game, and unenchanted, but insanely heavy. To the player, Clegane's sword is two-handed.

The Red Viper

He's got really high Agility and Luck stats, so anything that fortifies those or Fortify Attack is highly recommended. Resist Poison is highly recommended if you don't want his spear's effect to catch up to you.

Demon Cyborg
1 Phase
Scripted Mechanic: Self-Destruct -- He will signal that he is going to detonate his core at low health, and self-destruct 5 seconds later. The resulting fire blast is extremely high-damaging.

Resist Fire is recommended to withstand his cannons. Otherwise, you'll have to dodge them. A higher Speed stat is also needed to keep up with him; consider the Boots of Blinding Speed. Be careful not to be caught in his self-destruct detonation.

Jack Hammer
1 Phase
Scripted Mechanic: Bite -- Jack will attempt to bite the player. You can either choose to dodge (Agility 250+) or counter (Speed 350+). Fortify effects DO affect your chances, and Luck helps your odds by 1/10th your Luck stat. Bites inflict bleeding wounds which will damage your health and fatigue over time unless you heal to full health.
Scripted Mechanic: Grab -- Jack will attempt to grab and slam the player. You can either choose to dodge (Agility 250+) or grapple (Strength 250+). Fortify effects DO affect your chances, and Luck helps your odds by 1/10th your Luck stat. 
Scripted Mechanic: Uppercut -- Jack will throw an undodgeable uppercut that bypasses durability and knocks you into the air.

Fortify Attribute effects are highly, highly recommended if you don't want to get pieced up by Jack's stat-check events. High fatigue / Restore fatigue effects are also recommended so his hand-to-hand doesn't knock you out cold.

Z-CLASS BOSSES (VERY HARD)

Miyamoto Musashi
Phase 1 - Single Katana
Phase 2 - Niten Ichi-ryū (Two Swords Under Heaven) style
Phase 3 - Perfected / Swordless Niten Ichi-ryū style
Scripted Mechanic: Image Fighting Slash -- Prior to the fight beginning, Musashi will attempt to mentally slash you with his perfected image fighting technique. If you do not have an Endurance above 300 (withstand the slash) or an Agility above 300 (instinctively dodge), you will start the fight with a fatigue penalty.
Scripted Mechanic: Perfect Form Attack -- In his second phase, if you move away from Musashi, he will pause for a second and then launch himself at you with an undodgeable, highly damaging attack.

Musashi will stat check you hard if you do not have a high Agility or Luck, especially in his second and third phase. Weapons that can out-reach him, such as Spears, are highly recommended. Additionally, Musashi has Resist Magicka 100, but is otherwise vulnerable to magical effects. He is extremely high damaging in his third phase, so avoid his attacks at all costs. Additionally, his third phase makes him much harder to hit, so Fortify Attack effects are highly recommended. Good luck.
P.S. Musashi's dialogue options may be different depending on your stats and whether or not you've completed the Main Quest.

Awakened Nkarou: Cosmic Fear Mode
Phase 1 -- Ultimate Martial Arts
- Water Stream Rock Smash Fist: Reflect 100% and physical attacks are redirected to the player at 1.4x damage
- Whirlwind Iron Cutting Fist: Nkarou can attack at range and shred Player armor
- Exploding Heart Release Fist: Nkarou's punches deal health damage that bypasses your armor
Phase 2 - All-Life Eradication Fist
- Nuclear Fission: Nkarou's punches set off huge blasts that deal very high fire and poison damage
- Gravity Knuckle: Nkarou's punches bypass durability and teleport you around Morrowind
Phase 3 - Mode: Player
- Nkarou enhances his own attributes with the Player's attribute stats, and will copy the Player's weapon type with an enhanced version of his own.
Scripted Mechanic: Cosmic Radiation -- Nkarou will constantly emit radiation, causing 5 Poison damage per second and Damage Endurance 1 pt. per second

Ok, so... you're gonna want to use Resist Fire and Resist Poison HEAVILY (Cyborg's Arms are useful for this). Additionally, Resist Magicka will prevent the radiation from sucking away your total health via Damage Endurance. Beyond that, try to outmaneuver him. Don't bother raising your stats in the last phase as it will only power him up. Consider Absorb Health enchantments to keep yourself alive while dealing damage. The last phase makes him very hard to hit, so again Fortify Attack helps a lot. Generally, a high health pool is needed to make it far in this fight thanks to his armor-bypassing attacks.
