I know, at first glance. The idea is impractical, Because baby dinosaurs were never implemented, modding them in just takes up a slot in the roster that can be taken by a more original and unique dinosaur. And even in the event someone adds them. They're nothing more than decoration. They can't grow, and they interact and behave the same as the rest of the dinosaurs.

However, with the breakthrough that is adding new dinosaurs without the need to replace an existing slot in the roster. I believe this is the perfect chance to add them. You don't need to take up a slot for what is essentially a useless addition to the roster. And even though they can't grow or behave like a baby, juvenile and subadult animal would. The ontogenetic diversity alone can do wonders for the game in my opinion.

Dinosaurs in this game, while beautifully moddled and animated. Feel very robotic. The AI feels more robotic than this game's oldest predecessors like JPOG and even Zoo Tycoon 2.
But on top of that, all the animals look the exact same as eachother, there is no ontogenetic diversity, or individual variation outside of skins and the occasional battle scars. But i think seeing different growth stages, while still feeling very artificial because they can't grow or behave differently from the adult counterparts. Can breathe new light into how we view the game's animals.
