Increases the number of enemies for quests where I think it makes sense.

Understood? Great! Then here are the quest I've altered, and the reason as to why. And for anyone not wanting to be spoiled, I'll just mention the number of enemies in the file descriptions, while the file name itself will tell you what quest they cover.
Swan & Mitre:
The vanilla quest wants players to kill 3 enemies outside the pub, but according to my own experiences, all of them get massacred before players can do much of anything. Therefore, I've increased the number of enemies to 10, made sure they only use ranged weapons so they don't try to punch the Vagabonds to death, and tried to make them slightly more aggressive. So players should hopefully get a chance to kill at least one or two of them. May still not be much of a challenge due to all the support, but at least there's more going on now. And I've also used a new version of the IOD NPCs so that I could block the "We need to get the hell out of here." line, which made them seem too much like cowards.
Why are there no additional enemies inside the pub? Because it's more cramped, and also, aren't 7 additional enemies enough?
Stranger In A Strange Land:
The vanilla quest at one point requires players to kill some Stingwings. I'll let Rachel explain the rest.
"Stingwings. And a lot of them. Too many for the Thamesfolk to handle without suffering a casualty or two."
Sounds like this could be somewhat challenging, right? Okay ... let's open this barred door and ...
There are two bloody stingwings inside. TWO! How can you not handle two stingwings?!?!
So now there are 5! Because there isn't much space to squeeze in any more than that. And it does at least match the dialogue a little better.
The Train Job
The vanilla quest wants players to either blow up a train or steal it, while it's guarded by five enemies, though only four of them showed up for me. Seemed a bit too easy, though, especially since you can tell Gaunt that there were simply way too many dogs when you decide to blow it up instead. So I doubled the number, but also moved all of them outside the train, because when I placed new enemies inside the train, they simply wouldn't spawn properly despite the train being required for them to be enabled.
To be continued ... maybe. And no, I don't take requests, as that may spoil quests I haven't done yet.
