I made this Mod a few months ago, but stopped working on it because I couldn't find an input method I was happy with. 

What this mod does:

It adds in 3 consumable items: one to dodge left, one to dodge right and one to dodge back.
Each of them gives you a short burst of invincibility and plays the NPC dodge animation. This only works in 3rd person. I will try to add first person compatibility in the future.

Right now the only way to acces the items is through the console commands.
Just use "help dodge" and the items should show up.
For now it only works with melee weapons. If people are interested I could try and look for some animations with other weapon-types to make it work for them to.

Disclaimer: This Mod is one of the first Mods I ever made and especially one of the first times I got into scripting, so it is in no way  polished but it should still do what it says.
