500 grams of flour
300/320 ml of water (that is because I use a low quality common flour, if you have a good one, you can add more)
12 grams of salt
5 grams of dry leaven
Mix all dry ingredients and then pour the water in
Mix it with your hands until it's all homogeneous
Let it rest for 30 minutes
Fold the bread 10 times without tearing it
Let it rest for 10 minutes and then repeat this process more 3/4 times always between 10 minute intervals
Put the bread inside a bowl with a bit of flour poured in, the ideal bowl would be one that keeps the shape of the bread
Let it rest for 30 minutes and turn the oven on 250°C/482°F with an iron pan inside it
Put the bread inside the pan and make a x slice on the top
Put the lid on the pan and let it inside the oven for 20 minutes, then remove the lid and let the bread inside for more 30 minutes
Let the bread get cool for 1 hour and then you can eat it, letting it cool is important to let the heat inside the bread finish cooking it
