A similar mod by MrKilljoy called "Sell items plus increased item stacking" already exist here on Nexus. Their mod also increases the stacking of candles and relics/baubles by a decent amount.

Double the stacking of existing base game (ver. 1.04.59692) items that are originally 1 & 2 per stack.
This mod doubles the stack of currencies, inn, combat and food items. It aims to ease the inventory management and still be balanced (hopefully).
Most inn items are now stackable from 1 -> 2 and 2 -> 4.
Items like the stale bread is now stackable from 2 -> 4.
Some items like the laudanum that already allows 4 or more per stack are not changed.
Installation
Find your DDII directory (Right Click Game -> Manage _> Click folder icon (Epic Games) or Browse local files (Steam))
Unzip the downloaded mod
Drag the folder call "StreamingAssets" into DarkestDungeon II_Data
Confirm file replacement
Compatibility This mod is made for the 1.05.62244 version of the game and should still works as long as no items are removed or reworked (change to stacking size) in the future. If an update does mess up the mod, reinstalling it should fix the problem (check Posts for compatibility updates).
