I know you can do it on the Nomad version in the quest settings but ive tried enabling that setting in my quest and it has no effect in link mode.

  You can just make yourself taller ingame using the height settings in the Main Menu

  It is unfortunately not that simple. That scales enemies to your height and also just increases the height of the player model and not you yourself making it seem like you are constantly crouching.
