.PAKs are to be used with the BG3 Mod Manager
Drag and drop the downloaded zip into the manager,
Hit "refresh",
Move the newly installed file from the right side "Inactive Mods" to the left side "Active Mods"
Then "Save Load Order To File" and "launch game"
Loose versions are folders named "generated" which to be placed directly into your bg3/data folder
The steam game file location to place the generated folder is:
D:\SteamLibrary\steamapps\common\Baldurs Gate 3\Data
