This is an add-on to my mod series, Mithras' Mod Menus (MMM):

With this mod, you can sprint at the press of a hotkey of your choice. Interpolated acceleration is also included, so that you don't immediately get to max sprinting speed - although this option is not as jarring as it sounds.
You can also customize default run speed through the MCM.
