Hermit is a baby mudcrab companion which can be found on a tiny island in the lake near Riverwood.
This cute little guy will follow you anywhere but be careful you might lose him. If you do lose him just fast travel anywhere and you and Hermit will be reunited once again. Having trouble finding him on the island well he is there but is probably hiding.
