I was astonished to not see a mod like this already (or I didn't find it) so I decided to give it a try.
v1.0:
The regular MudCrabs will not attack you now.
The bigger ones (as it seems to have bigger one) will still attack you.
If you attack them of course, they will respond.
***Install***
Just put the PeacefulMudcrabs.esp in your Skyrim Data folder (usually located in ...\Steam\SteamApps\common\skyrim\).
Make sure the mod is activated by running the Skyrim Launcher and checking the box PeacefulMudcrabs.esp.
***Uninstall***
Just delete PeacefulMudcrabs.esp from your Skyrim Data folder.
***Notes***
I've made this mod on a french version of Skyrim. I don't know if it will alter the naming of your crabs in game (maybe they will be named 'Vasard' like in french)
