Vanilla and Lighter Vanilla are both lore friendly (obviously), the lighter version is just a slimmer version for different riding uses and because Riften is a poor area they would have less healthy horses. Plus the stable master killed a foal by sitting on it, I think it shows he is not always with it and taking the best care.
Fjord actually comes from this kind of region they fit perfectly lore wise, there is no reason why they could not be in Skyrim.
Percheron/Boulonnais are importish BUT Markarth specializes in war hounds, why would/could they not provide specialized horses for war as well? Horses make more money then the "highly trained war hounds" so they should be special enough to do that.
Marwari is alittle more import then the rest but then again Solitude is the capital city, it would be most likely to have highly priced rare breeds of anything for the wealthy class to blow their septims on.
Friesian is unknown at this point as its not been worked on, either a replacer for the Marwari breed or perhaps Shadowmere.
Mod will not be for everyone, which is why there will be a vanilla only version with just the tack in it. You do not like my horse choices, then there is still somthing for you to enjoy.
