With the console command "tm" you can remove the Heads-Up Display (HUD) on the screen. You´ll find the most important commands for pretty screenshots at http://www.uesp.net/wiki/Skyrim:Console
I have only just got into taking images of my play-through's, ill check that link out, there are some stunning screens taken on here, love the effects people have created/achieved with various shots
