Anyhow various follower mods allow you to have multiple companions of either the 2 or 4 legged variety ... but they tend to be buggy at times when dealing with animals Meeko works well with AFT as AFT has code for it but general animal companions don't behave as well. There might be a pet mod that can handle multiples. Usually one person and one animal is all I prefer to travel with myself.

Usage of the 'setessential' console command is: setessential <base ID> <1/0> - set a character (NPC) as immortal (1) or mortal (0).
Note that the base ID and not the ref ID must be used. The ref ID is what appears when clicking on an object with the console open. To find an NPC's base ID, however, you can either a) browse to their respective page (see: People and/or NPCs) or b) use the help function in-game to search for them by name, recording whatever value matches their name under the "NPC_" category of result. Once you have the base ID, enter the command using either 1 to set him/her immortal or 0 to set him/her mortal. For example, setessential a2c8e 1 would set Lydia as immortal.
The whole thing with running into Meeko needed a little something extra to drag you into it. It's interesting to find his owner had died and he's all alone but a little quest needed to be added like finding him a new home if you did not want a dog follower.
Just keep his PRID handy and easy enough to move him to you with the moveto command. Or use the enhanced Meeko mod, which is what I am using, which has a horn to summon him. As for dying - takes all of 1 minute to change him to essential or protected in the CK.
