I've had a few people ask so I'll just copy/paste:
If you type in the game's console tfc 1 to pause the game and enable free camera and then tm to hide the console, you can take a series of screenshots and photoshop or some freeware software out there will stitch them together automatically.
The principle behind the shots themselves is the same as for taking panorama shots with a real camera: steady horizontal shots with some overlap for stitching.
If you google around a bit you should find more info and freeware software to stich them together if you don't have PS.
...the rest is just a bit of composition and luck.
