I don't think the overall light level matters as much for realism as making sure there are shadows and a big contrast between the light and shadow. I haven't gotten into how to do lighting yet, so I don't know how to do what I mean but have the area right around the torch bright and the corners dark and the overall light level whatever it needs to be to see the level. Just a couple of each will make a big difference to the 'feel' of the level.
